- 2 large ripe bananas, mashed (about 1 cup)

Instructions
Preheat & Prep:
- Preheat the oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan or line it with parchment paper.
Mash & Mix Wet Ingredients:
- In a large bowl, mash the bananas until mostly smooth.
- Stir in the cottage cheese, then add eggs, melted butter, sugar, and vanilla extract. Whisk until well combined.
Combine Dry Ingredients:
- In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
Mix Everything Together:
- Gradually add the dry ingredients into the wet mixture. Stir gently until just combined.
- If using mix-ins like chocolate chips or nuts, fold them in now.
Bake:
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve:
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy warm or at room temperature.

- For a smoother texture: Blend the cottage cheese before adding it to the batter.
- For extra flavor: Add a pinch of nutmeg or swap cinnamon for cardamom.
