Ingredients
Scale
- 2 cups all-purpose flour (250 g)
- 1 cup granulated sugar (200 g)
- 1 cup kefir (240 ml)
- ½ cup melted butter or vegetable oil (113 g)
- 2 large eggs
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp vanilla extract (optional)
For the Chocolate Glaze (Optional):
- 1 cup powdered sugar (120 g)
- 2 tbsp cocoa powder
- 3 tbsp milk (or more for desired consistency)
- 1 tbsp melted butter
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) and line a 9×13-inch baking sheet with parchment paper or coat it generously with cooking spray.
- Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Blend Wet Ingredients: In a separate larger bowl, beat the eggs and sugar until pale and slightly frothy. Whisk in the melted butter (or oil), followed by the kefir. Add vanilla extract if desired.
- Incorporate Dry Mixture: Gradually fold the dry ingredients into the wet mixture. Stir just enough to combine; avoid overmixing.
- Pour and Bake: Transfer the batter into the prepared baking sheet, smoothing it into an even layer. Bake for 20–25 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Decorate: Allow the cake to cool in the pan for 10–15 minutes. Once cooled, top with chocolate glaze, simple frosting, or fresh fruit.
Notes
- Ensure the kefir is fresh for the best tangy flavor.
- For a richer taste, try topping the cake with a chocolate glaze or cream cheese frosting.
- Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
