This pecan pie bark recipe is a sweet, crunchy treat made with graham crackers, buttery caramel, and toasted pecans. It’s an easy, snackable dessert that’s perfect for holidays, gifting, or just a cozy homemade indulgence. With a crisp cracker base and rich caramelized pecans, this recipe delivers the classic flavors of pecan pie in a fun, bite-sized form.

  • Total Time: 40 minutes
  • Yield: 12 slices 1x

Ingredients

Scale

For the Bark Base:

  • 12 full sheets graham crackers (or enough to cover the pan)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar (light or dark)
  • ¼ cup corn syrup (or maple syrup/honey alternative)
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1¼ cups chopped pecans (lightly toasted)

Optional Toppings:

  • ½ cup melted chocolate (dark, milk, or white for drizzling)
  • Flaky sea salt for extra contrast

Instructions

  • Preheat & Prepare

    • Preheat oven to 350°F (175°C).
    • Line a 13×9-inch pan or baking sheet (18×13-inch) with parchment paper or nonstick foil.
    • Arrange graham crackers in a single layer, covering the entire surface.
  • Make the Caramel

    • In a medium saucepan over medium heat, melt butter, brown sugar, and corn syrup, stirring constantly.
    • Once the mixture starts bubbling, lower the heat and continue stirring for 2–3 minutes until smooth and slightly thickened.
    • Remove from heat and stir in vanilla extract and salt.
  • Assemble & Bake

    • Pour the caramel evenly over the graham crackers, using a spatula to spread if needed.
    • Sprinkle the chopped pecans evenly on top.
    • Bake for 10–12 minutes (8–10 minutes if using a sheet pan) or until the caramel is bubbly and golden brown.
  • Cool & Break

    • Remove from the oven and let it cool at room temperature for 20–30 minutes.
    • Once firm, break into pieces or cut into bars.
    • For a faster set, transfer the pan to the fridge for 15 minutes before breaking.
  • Optional Toppings & Storage

    • Drizzle with melted chocolate or sprinkle with sea salt for extra flavor.
    • Store in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks.

Notes

  • Why Use Corn Syrup? It helps prevent crystallization, giving the caramel a smooth texture.
  • Variations: Try swapping pecans for walnuts, almonds, or hazelnuts for a different flavor.
  • Thinner or Thicker Bark? Use a 13×9-inch pan for thicker bark and a sheet pan for thinner, crispier bark.
  • Chocolate Drizzle Idea: Melt dark or white chocolate and drizzle after the bark has cooled for a decadent twist.
