Ingredients
Scale
For the Bark Base:
- 12 full sheets graham crackers (or enough to cover the pan)
- 1 cup (2 sticks) unsalted butter
- 1 cup brown sugar (light or dark)
- ¼ cup corn syrup (or maple syrup/honey alternative)
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 1¼ cups chopped pecans (lightly toasted)
Optional Toppings:
- ½ cup melted chocolate (dark, milk, or white for drizzling)
- Flaky sea salt for extra contrast
Instructions
Preheat & Prepare
- Preheat oven to 350°F (175°C).
- Line a 13×9-inch pan or baking sheet (18×13-inch) with parchment paper or nonstick foil.
- Arrange graham crackers in a single layer, covering the entire surface.
Make the Caramel
- In a medium saucepan over medium heat, melt butter, brown sugar, and corn syrup, stirring constantly.
- Once the mixture starts bubbling, lower the heat and continue stirring for 2–3 minutes until smooth and slightly thickened.
- Remove from heat and stir in vanilla extract and salt.
Assemble & Bake
- Pour the caramel evenly over the graham crackers, using a spatula to spread if needed.
- Sprinkle the chopped pecans evenly on top.
- Bake for 10–12 minutes (8–10 minutes if using a sheet pan) or until the caramel is bubbly and golden brown.
Cool & Break
- Remove from the oven and let it cool at room temperature for 20–30 minutes.
- Once firm, break into pieces or cut into bars.
- For a faster set, transfer the pan to the fridge for 15 minutes before breaking.
Optional Toppings & Storage
- Drizzle with melted chocolate or sprinkle with sea salt for extra flavor.
- Store in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks.
Notes
- Why Use Corn Syrup? It helps prevent crystallization, giving the caramel a smooth texture.
- Variations: Try swapping pecans for walnuts, almonds, or hazelnuts for a different flavor.
- Thinner or Thicker Bark? Use a 13×9-inch pan for thicker bark and a sheet pan for thinner, crispier bark.
- Chocolate Drizzle Idea: Melt dark or white chocolate and drizzle after the bark has cooled for a decadent twist.
